Northwest Cook: Tuna 'ranches' may help save wild bluefin

While bluefin may be the filet mignon of tuna, its numbers have plummeted because of consumer demand. Now, tuna farms in Mexico could help protect bluefin in the wild. ... All-you-can-eat buffets and super-sized portions are being blamed for helping make the U.S. the most fattening place in the world to vacation -- at least for British tourists. ... Herding tuna: There’s been plenty of talk about how rapidly bluefin tuna is  becoming depleted (their numbers are estimated to be 70 percent below their 1970 levels). But a recent Los Angeles Times article says there may be a way to ease the pressure on wild tuna: ranching.

“Today, a glimmer of hope for guilt-free bluefin tuna lies south of the border. Umami, an Icelandic seafood conglomerate, purchased a Mexican aquaculture operation in late 2010 and is ranching what it calls ‘sustainable’ Pacific bluefin. It's one of several bluefin ranches that have cropped up in waters across the world.”

Although 90 percent of bluefin tuna is consumed in Japan, its popularity in the U.S. has grown enormously.

One sushi chef in Japan who began serving the Baja-farmed bluefin six months ago says "the farmed fish tastes a little different, but most people can't tell the difference in taste. It has a little more fat than the wild fish.”
 
"Holiday fat map": When most of us travel, we tend to overindulge a bit, which is only natural if you encounter delicious foods in charming locales. But the Daily Mail online is reporting that the average weight gain for Britons who vacation in the U.S. is eight pounds in two weeks. Next on the “holiday fat map” is the Caribbean, which lures tourists with its all-inclusive resorts. Rounding out the top five for most fattening destinations: France, Italy and Greece.  

Half of those polled “blamed larger portions for putting on weight and the same number said it was down to ‘lounging around.’¤”

“Four in 10 said alcohol was at fault, one in six found it hard ‘saying no to seconds’ and one in five said free refills were responsible.”

Hollywood gossip: Good news for farmers market lovers who live on the east side: Beginning tomorrow, Hollywood Farmers Market will assume management of Lloyd Farmers Market, a mid-week year-round market.
