Sweet stuff keeps 'em coming back

Like most small-town fundraising activities, pie is a staple that brings the customers back. It is no different at this year’s First Presbyterian Church pork barbecue meal on Wednesday.

Co-chair of the event Martha Holland of Lincoln said organizers plan to serve nearly 800 dinners that day and those who have come in the past have developed a taste for either pie or cake made by the 45 volunteers who prepare items to donate for the dessert portion of the meal.

“Pie is more popular than cake and it’s funny because people will request that they want a piece of pie by a certain maker,” said Holland. “It’s funny because if you forget, then they are disappointed so we try and accommodate as many as we can.”

Joyce Shirley of Emden said she will make cherry, peach and Dutch apple pies that will be served in the dessert mix; she also is known for her angel food cake with the seven-minute frosting.

“I’ve had people request my angel food, but I’ll also bring the others,” said Shirley.

Even though the staple of the desserts is the well-known fruit pie, — cherry, peach and apple — there are some items people request that are not found in retail stores.

Martha’s sister, Rhoda Holland, makes a gooseberry pie that will have people placing a request and there will also be rhubarb pie in the mix. “Gooseberry is from the past and people aren’t familiar with it because it can be pricey to make. But I’ve been told it is good and there is a certain taste to it,” said Holland.

Beth Green makes a pineapple upside down cake that people have enjoyed and have requested to make their meal complete.

Shirley said the pies are not the only dessert item that has a calling.

I make mine with Splenda and as you measure it like sugar in the amount sense, then just cut the rhubarb, toss it with the starch, I use cornstarch, Splenda about 2/3′s of a cup, lemon juice a ash of salt and pinch of cinnamon. I do this for pies, crumble cobblers and for stewing, only no starch for stewed rhubarb, if you add other fruits like apples, strawberries, blueberry’s just weak the starch a bit say 1 teaspoon more.
